1. Does the fact that newly-minted President Obama added an additional White House chef to his staff mean he doesn’t like the “lutong (White) bahay” food that Bush-era holdover and Filipina White House chef Cristeta Comerford was cooking?
Nah, it just means that the new US commander-in-chief is more of a health nut than Dubya was and therefore can’t be eating Pork Adobo, Lechon Kawali, Lumpiang Shanghai and Leche Flan dessert EVERY day. So, Comerford is staying on… but Chicago chef Sam Kass is joining the staff and will cook on the days when Barack and Michelle need to “cleanse”.
2. YOU, however CAN eat that food and more by coming to Kapisanan on February 7 for Taste Your Past.. Eat Your History. Chef Rodolfo Boquila is going to be cooking up a storm, which is a great reason to brave one and come out to the K for some good eats.
3. Looks like Filipino cuisine is on the come-up… even the ones you might not like. The Halifax Metro has an article about a guy who has started packaging and marketing preserved Balut (wait isn’t Balut already a preserved duck embryo?) Obviously, this is an attempt at selling our ‘exotic cuisine’ to white people.
Someone forgot to tell him that Balut is kinda gross. I can’t wait to see how many kids get this as an Easter gift because their parents thought it was a Kinder egg (MOMMY! My toy has EYESSSS)… but you can never can tell what what will catch on, I guess.
Look, it happened with the Yo-Yo. Now, almost no one knows that the spinning wooden thing on a string is a Filipino creation.
Let’s just hope that when Balut goes mainstream — we get credit!
